1 medium onion, diced

3 celery stalks, chopped

3 medium carrots, diced

1 medium zucchini, diced

1 medium yellow squash, diced

2 teaspoons kosher salt

1 (15 oz) can chickpeas (garbanzo beans), drained and rinsed

2 (14.5 oz) cans fireplace roasted tomatoes

8 cups vegetable or hen broth

1-piece Parmesan rind (approx. 2×3)

8 oz. field of Mighty Pasta (or some other quick form like penne, rotini, or orzo)

½ lemon, squeezed and juiced

3 cups contemporary kale, chopped, or child kale

2 T. basil pesto

Kosher salt and black pepper, to style

Parmesan cheese, grated for garnish

Parsley, chopped, for garnish

Directions
