Usually I might add a ton of herbs and veggies to pasta however I discovered this beautiful rainbow pasta and I didn’t need something to detract from its magnificence. So I assumed, why not simply make a simple lemony pasta!
I packed this up for my Lemon Lakeside Picnic at The Harbor yesterday. I ate it alongside a spinach salad with blueberries and cucumber, a profitable combo!
Rainbow Pasta Salad
1 pound rainbow pasta, raw
Lemon dressing, recipe follows
8 oz feta cheese
1/4 cup pine nuts
- Cook dinner pasta in response to bundle instructions.
- Whereas pasta is cooking, whisk collectively lemon dressing (see beneath).
- When pasta is cooked al dente, drain and instantly toss with half of the lemon dressing. Let cool for about twenty minutes, then toss with feta cheese and pine nuts. Chill till able to serve, then toss with remaining dressing.
Zest from one massive lemon
1/4 lemon juice (one massive or two small lemons)
1/4 additional virgin olive oil
- Zest and juice lemons. Slowly whisk in olive oil. Season to style with salt and pepper.
